Homemade Salsa (in 7 minutes)

This recipe is straight from my mother’s kitchen. There was always a jar of fresh salsa in our fridge growing up, and it is one of the things I insist on making from scratch. With the help of my small food processor, I timed myself just to see how long it takes and couldn’t believe I was done in seven minutes…wasn’t even rushing against the clock. I suggest making this at least the night before to allow for the flavors to develop.
ingredients:
1 large can of diced tomatoes
1 handful fresh cilantro
1 jalapeño
1 small onion
1-2 tablespoons garlic powder
1 tablespoon cumin
1 tablespoon fresh lemon juice
1 pinch of salt
Cut onion and jalapeño into quarters and combine all ingredients into a food processor. Pulse the food processor until combined and all ingredients are a similar consistency. I like my salsa smooth as opposed to chunky, so I tend to pulse it a bit longer.
