Dinner Date in 15 Minutes
You never know when you might get caught off-guard by entertaining. Last minute dinner date? All you need is a great pasta sauce, some frozen ravioli, and parmigiano-reggiano in the kitchen and you will always be ready to make a great meal. This isn’t so much a recipe, more of a “in case of entertaining emergency” kitchen staple. The trick is really taking the time to find a great sauce and always having a few cans in the pantry. I picked up this pesto with truffles sauce from Eataly as a special treat and it was out of this world. It is light and fresh with that signature truffle smell and taste in every bite. Serve in soup bowls for a cozy presentation with a glass of Pinot Gris and you won’t have to leave home to find the best table in town.
Cheese Ravioletti with Pesto and Truffle Sauce: Serves 2
{What You Need}
1 6 oz can Pesto and Truffles Sauce
1 package cheese ravioletti pasta (just a smaller version of ravioli)
2 tablespoons shaved parmigiano-reggiano
{What To Do}
Cook the pasta (7-8 minutes, until al dente)
Warm sauce in a large sauce pan then mix in the cooked pasta
Serve with a sprinkle of parmigiano-reggiano
Hope this served as a helpful reminder to stock up now so you can look like a pro later! Happy Monday.
