Mini Chicken Tacos (Mexican Style)


The fresh and spicy flavors of the pollo asado combined with salsa and guacamole in a small taco shell are a great addition to any cocktail menu and can be whipped up in no time.

1 package of Trader Joe’s Pollo Asado (thinly sliced chicken marinated in lime, cilantro, and yummy Mexican spices)
1 package flour tortillas
Salsa and guacamole to garnish

for the tortillas: makes approx. 20 small tortillas
-Preheat oven to 400 degrees
-Use a mug and sharp knife to cut small circles around the tortilla. I used a mug and water glass to make two sizes and get the most out of each tortilla.
-Place tortilla circles on foil covered cookie sheet.
-Cook for 3 to 5 minutes, or until tortillas start to “puff up”.
-Take out of oven and fold immediately in half to make a taco shell. You’ll need to fold while still hot, otherwise they will crack when they cool.


for the chicken:
Take the package of pollo asada and cook in a skillet (7 to 10 minutes) until browned and cooked all the way through. Using a fork, shred the chicken into bite-sized pieces.

Arrange the taco shells on a plate, add chicken and a dollop of salsa and guacamole to garnish.
