I came across these amazing carrots while out at the farmers market and knew I had to find a fun way to include them in our Mexican dinner. My girlfriend suggested a fresh carrot slaw-what a fabulous idea! I threw this together and it added that fresh crunch to the tacos.
Carrot-Lime Slaw (serves 4)
six medium carrots
juice of one lime
half a teaspoon of cayenne pepper
salt and pepper to taste
Peel and grate carrots and place in refrigerator until ready to serve
In a small bowl combine lime and cayenne pepper
When ready to serve combine carrots and dressing and add salt and pepper to taste. I served it in a cleaned out beach shell.
